What are Overnight Oats?
Overnight oats are pretty much what they sound like. You prepare them the night before and let them sit overnight. In the morning, you just heat them up and you have a perfect breakfast! The oats will soak up all the liquid and be ready in the morning for consumption.
I love to meal prep and this is a great breakfast meal prep idea. This recipe is great if you need energy in the morning.
Chia seeds are rich in fiber, omega-3 fats, protein, vitamins and minerals. Yes, healthy can be tasty, too!
Overnight Oats Ingredients
2/3 C Greek coconut yogurt
2/3 C old fashioned oats
2 tsp chia seeds
1 tsp milled flax seeds
½ tsp pure vanilla extract
1 tsp coconut powder
½ tsp ground cinnamon
2 T shredded coconut flakes
1/3 C almond milk
walnuts and additional shredded coconut flakes for garnish, optional
How to Make Coconut Overnight Oats
In a small bowl add in your dry ingredients.
Fold in the yogurt and milk.
Store oatmeal mixture in a small glass jar with a seal tight lid. Refrigerate for a minimum of two hours, or up to 5 days.
Before serving, give mixture a gentle stir with a spoon and heat in a microwave for one minute.
