One Point Weight Watchers Blueberry Pancakes are a delicious breakfast made with rolled oats and greek yogurt.
Breakfast is my favorite meal of the day. There is nothing like starting a fresh day out right with a delicious meal.
When I joined Weight Watchers, I thought I had to give up a lot of my favorite yummy breakfast foods. But it turns out that I just had to tweak them a bit, like these 2 point Breakfast Veggie Rings.
Can you believe that blueberry pancakes can be only one point each?! Well, it is possible! These pancakes are proof that you can still eat delicious food. Syrup is extra, of course. 😉

Weight Watchers Pancakes Ingredients

1/2 C rolled oats
1 tsp baking powder
1 (5-6 oz) container of Blueberry Greek Nonfat Yogurt
1/2 ripe banana
1 large egg
1/2 tsp vanilla extract
1/3 C fresh blueberries
Blender or an immersion blender
How to Make Weight Watchers Pancakes
In a blender, combine oats, baking powder, yogurt, banana, egg, and vanilla extract and pulse until smooth. [Or combine in a bowl and use an immersion blender.]
Let sit 5-10 minutes to thicken.
Heat a lightly greased skillet over medium heat and scoop batter onto pan, topping with blueberries and cooking for 1-2 minutes on each side.
Make 5 pancakes with the batter for the pancakes to be 1 point each. If you want larger pancakes, you can make only 4 pancakes for 2 points each. Add additional fruit on top for no additional points! Enjoy!
