This Gingerbread Old Fashioned is a fun holiday twist on a classic cocktail. We start by making an easy spiced molasses simple syrup and then mix it with bourbon and bitters for a cocktail that is warm, lightly spiced, and with a hint of sweetness.
To make this a gingerbread cocktail, we’re adding the classic gingerbread spices – ginger, cinnamon, and cloves.

Gingerbread Old Fashioned Ingredients
To make this spiced old fashioned, you will need the following ingredients (scroll down to the recipe card below for exact amounts and directions):
- Water: Water adds moisture and helps the sugar dissolve in our simple syrup.
- Light brown sugar: Light brown sugar enhances the molasses flavor and sweetens the cocktail.
- Molasses: Molasses adds the classic earthy gingerbread flavor to the cocktail.
- Ground ginger
- Ground cinnamon
- Ground cloves
- Bourbon or rye: I’m using bourbon as the base for my old fashioned but feel free to use rye if you like a slightly smokier flavored cocktail.
- Angostura bitters: Angostura bitters add a bitter herbal taste to the cocktail and are a classic addition to an old fashioned.

How to Make This Christmas Old Fashioned
- In a small saucepan, combine the water, light brown sugar, molasses, ground ginger, ground cinnamon, and ground cloves.
- Bring the mixture to a boil over medium heat. Then remove the saucepan from the heat and allow the syrup to cool to room temperature.
- Transfer the simple syrup to an airtight container and store in the fridge until ready to use or up to 10 days.
- Add the bourbon, spiced simple syrup, and bitters to a lowball glass and stir to combine.
- Add a large ice cube (or a few small ones) and stir gently again. Enjoy immediately.
