Breakfast Veggie Rings with Fried Eggs | Weight Watchers Freestyle 2 Points
They say breakfast is the most important meal of the day. As someone who used to skip breakfast, I agree! Now I cannot skip breakfast or my blood sugar drops. Ugh, getting older stinks. My favorite thing to eat for breakfast is eggs, mainly because they are zero points for the Weight Watchers Freestyle program. These veggie rings with fried eggs are only 2 points each! You can try cooking them with nonstick spray to make them zero points, but I’m not sure if the eggs will fry correctly. Let me know if you try it. What You Need for Breakfast Veggie Rings with Fried Eggs
Makes 2 veggie rings (2 points each)
1 yellow bell pepper
Salt and pepper
Roma tomato, chopped
small purple onion, chopped
1 tsp coriander leaves, chopped
1 T olive oil
Optional: shredded cheese
How to Make Breakfast Veggie Rings with Fried Eggs
Cut the peppers into 1/2 inch thick rings. Remove the seeds and center of the pepper.
Chop the tomato, purple onions, and coriander leaves into small pieces.
Heat the olive oil in a non-sticky frying pan over medium heat. Place the pepper rings into the pan and cook for 2 minutes.
Crack the eggs directly into the pepper rings. [Tip: First pour a small amount of egg white into the ring to check if it leaks. Remove leaked egg whites from sides in case it leaks.]
Quickly add the desired amount of tomato and onion by sprinkling them over the egg.
Sprinkle a pinch of salt and black pepper powder over the egg ring.
Cover the pan and let the yolk cook for about 2 minutes. Uncover the pan once you’re satisfied with the yolk.
Optional: Sprinkle some shredded cheese over the egg ring and sauté for another minute. I use a low fat shredded cheese for less points.
