This Pomegranate Mimosa puts a Christmas twist on a classic cocktail. Start your Christmas brunch with a mimosa recipe that will get you in the holiday spirit. 

The red pomegranate juice and green, branch-like rosemary sprigs make this the best Christmas cocktail. It reminds me of a Christmas tree!

To make this Christmas mimosa, you will need the following ingredients (see the recipe card below for exact amounts):

  • lime: Lime is definitely the best citrus choice to pair with pomegranate and champagne, but you can change up the flavor by trying orange or even lemon around the rim. If you do not want any citrus flavor, you can just use water to wet the rim.
  • sugar
  • pomegranate juice
  • champagne: Brut Champagne is the best bubbly to make mimosas. A dry Prosecco or Cava are also great choices. The key is to use dry, since you will be adding juice.
  • pomegranate seeds: Some grocery stores have prepared pomegranate seeds (called “arils”) so you can save yourself a bit of prep time. I find mine in the produce section by the refrigerated juices.
  • rosemary sprigs

How to Make Christmas Mimosas

  1. First, you are going to create the sugar rim for the mimosas. Glide the lime slices around the rim of each champagne flute. Place the sugar on a shallow dish, and dip the wet champagne flute into the sugar.
  2. Carefully fill the glasses with champagne until they are ¾ full.
  3. Fill the rest of the glass with pomegranate juice.
  4. Garnish with fresh pomegranate seeds and rosemary.

Picking Your Champagne Flutes

You will need champagne flutes for this cocktail. You can use traditional champagne flutes, stemless champagne flutes, extra classy champagne flutes or crystal champagne flutes. 

I used traditional champagne flutes. This drink will look good in any glass!

Ingredients
  

  • 1 lime sliced
  • 3 Tablespoons sugar
  • 2 cups pomegranate juice
  • 750 ml champagne 1 bottle
  • ½ cups pomegranate seeds
  • 8 rosemary sprigs

Instructions
 

  • Glide the lime slices around the rim of each champagne flute.
  • Place the sugar on a shallow dish, and dip the wet champagne flute into the sugar.

Notes

Brut Champagne is best for this recipe. You can use any dry, such as Dry Prosecco or Cava.
