  • puff pastry
  • heirloom tomato
  • ricotta cheese: for even more flavor, use this whipped ricotta dip
  • salt and pepper
  • fresh basil
  • olive oil

How to Make Hand Pies

Savory hand pies are really simple to make!

  1. Prepare your oven and baking sheet. Preheat the oven to 400 degrees (or recommended temperature on the package for the puff pastry) and line a baking sheet with parchment paper.
  2. Prepare the ingredients. Chop the tomatoes and cut the pastry dough into four equal strips.
  3. Make the hand pie. Evenly divide the ricotta and tomatoes and spoon them onto one half of each pastry dough piece. Sprinkle with basil, salt and pepper. Fold over the other half of the pastry dough and use a fork to press the edges closed.
  4. Bake the hand pie. Drizzle with olive oil and bake for about 30 minutes. You want to make sure that as many layers of the pastry dough as possible are able to puff up and cook. The pastries should be done when they are golden brown and fully puffed up.
  5. Let the hand pie cool. Allow a little time for them to cool before serving.

Tips for Savory Hand Pies

  • Want more substance? Add meat! For a really savory hand pie, add cooked beef, chicken or ham.
  • Puff pastry must be refrigerated. You want to use it as soon as it is thawed. Don’t let it thaw too long.
  • Serve with mixed greens.
  • Hand pies can also be sweet! Try an apple hand pie with a sugar coating. Mmmmm
