This Fried Green Tomato Salad is proof that salads do not have to be boring! Bacon and pork rinds add so much flavor to this salad.

I recommend using a cast iron skillet to make this recipe. Cast iron skillets heat evenly and make frying an easy task.

How to Make Fried Green Tomatoes Salad

  1. Cook bacon on stove in a cast iron skillet top until crispy. Save bacon fat.
  2. Crush pork rinds into a fine powder and place in a shallow dish. Add parmesan cheese, salt and black pepper to pork rinds.
  3. Slice each green tomato into 4 large slices, about half an inch thick.
  4. Crack egg into bowl and whisk with a fork.
  5. Dip the tomato slices into the egg mixture and then into the pork rind mixture.
  6. Add coated tomatoes to the cast iron skillet with bacon fat.
  7. Cook over medium heat for about 2.5 minutes each side depending on the thickness of each slice until golden brown. I like to pat them dry with paper towels to get rid of any excess bacon grease.
  8. Add all of the fresh vegetables together in a large bowl and toss. Serve in 4 salad bowls. Add 2 pieces of bacon and 2 fried green tomato slices per salad. Serve with dressing of choice.

Serving Suggestions

Serve with the dressing of your choice. My favorites to serve with this salad are ranch dressing and balsamic vinaigrette dressing. You can also add chicken breast to this salad for extra protein.

Recipe Tips

  • If you are omitting the bacon, fry the green tomatoes in olive oil or vegetable oil instead.
  • Use a splatter guard to prevent fat and oil from leaving the pan.

I love this recipe because there is a ton of flavor in the fried green tomato.
