Fried Green Tomato Salad with Bacon

This Fried Green Tomato Salad with Bacon is proof that salads do not have to be boring! It also fits into your keto diet or Weight Watchers program. At only 4 Weight Watchers points per salad, you can still feel full and satisfied. The bacon and pork rinds add so much flavor to this keto salad.

What You Need for Fried Green Tomato Salad Recipe

For the Fried Green Tomato:
2 large green tomatoes
1/2 C crushed pork rinds
1/4 C grated parmesan cheese
1 egg
salt and pepper

For the Salad:
8 C Romaine lettuce, chopped
12 Cherry tomatoes, diced
1 Cucumber, sliced
1/4 C onion, diced
1/4 C carrots, diced
8 slices of center cut bacon

How to Make Fried Green Tomato Salad

Cook bacon on stove in a cast iron skillet top until crispy. Save bacon fat.

Crush pork rinds into a fine powder. Add parmesan cheese, salt and pepper to pork rinds.

Slice each green tomato into 4 large slices.

Crack egg into bowl and whisk with a fork.

Dip the tomato slices into the egg mixture and then into the pork rind mixture.

Add coated tomatoes to the cast iron skillet with bacon fat.

Cook over medium heat for  about 2.5  minutes each side depending on the thickness of each slice until golden brown. I like to pat them dry to get rid of any excess bacon grease.

Add all of the vegetables together in a large bowl and toss. Serve in 4 salad bowls. Add 2 pieces of bacon and 2 slices of fried green tomato per salad. Serve with dressing of choice.

This salad is 4 points on the Weight Watchers Freestyle program. I added 1 point per salad due to the tomatoes being fried in the leftover bacon grease. I used Oscar Mayer center cut bacon, which specifies that the nutritional facts are per 2 cooked slices. That implies that bacon grease is not included. A general rule of thumb is 1 point per 1 tsp of cooking oils. So now you know. 🙂
