Bell Pepper Eggs are a fun way to eat breakfast. Bell peppers cut to form a veggie ring are filled with fried eggs, cheese, and veggies.

This recipe puts a colorful twist on the classic Eggs in a Basket recipe. Instead of bread, egg is fried in a bell pepper ring.

Bell Pepper Eggs Ingredients

To make this veggie breakfast recipe, you will need the following ingredients (go to the recipe below for exact quantities and instructions):

  • Yellow bell pepper
  • Eggs
  • Salt and pepper
  • Roma tomato
  • Red onion
  • Cilantro
  • Olive oil
  • Shredded cheese: optional

How to Make Veggie Rings 

  1. Cut the peppers into 1/2 inch thick rings. Remove the seeds and center of the pepper.
  2. Chop the tomato, purple onions, and coriander leaves into small pieces.
  3. Heat the olive oil in a non-sticky frying pan over medium heat. Place the pepper rings into the pan and cook for 2 minutes.
  4. Crack the eggs directly into the pepper rings. [Tip: First pour a small amount of egg white into the ring to check if it leaks. Remove leaked egg whites from sides in case it leaks.]
  5. Quickly add the desired amount of tomato and onion by sprinkling them over the egg.
  6. Sprinkle a pinch of salt and black pepper powder over the egg ring.
  7. Cover the pan and let the yolk cook for about 2 minutes. Uncover the pan once you’re satisfied with the yolk.
  8. Optional: Sprinkle some shredded cheese over the egg ring and sauté for another minute.
