  • Pineapple: fresh pineapple is best.
  • Strawberries
  • Red bell pepper
  • Green bell pepper
  • Cilantro
  • Red onion
  • Limes
  • Honey
  • Cumin
  • Salt

How to Make a Pineapple Boat

  1. Lay the pineapple down and roll it to find the flattest side. This will be your bottom.
  2. With a serrated knife, cut just above the leaves and slice off the “top” of the boat.
  3. Carve around the inside of the pineapple with your knife, without poking through the bottom.
  4. Cut the pineapple into cubes by cutting long slices down the length of the pineapple and then across. Scoop out the pineapple pieces with a spoon.
  5. Scrape the inside of the hollow pineapple to smooth it out.

How to Make Pineapple Salsa

  1. Dice the pineapple until it’s reached the consistency of crushed pineapple. Drain slightly.
  2. In a large mixing bowl, combine pineapple pieces and all remaining ingredients. Toss well using a rubber spatula.
  3. Cover and place inside the refrigerator for 30 minutes.
  4. When done, spoon into the bottom of the hollow pineapple. Top with additional chopped cilantro and serve with tortilla chips.
