I have just always accepted Italian words for food without understanding the translation. If I’m out at a restaurant, I usually just point to the menu, “I’ll have that.” Apparently the word means hunter, and food prepared alla cacciatora refers to a “hunter-style” dish with onions, herbs, tomatoes, and bell peppers. All of those things are in this dish so I guess it qualifies! It sounds less fancy when you explain what it really means, so I’ll just stick with “chicken cacciatore.”

What You Need for Instant Pot Chicken Cacciatore Recipe
6 chicken thighs
2 tsp salt
2 tsp pepper
3 cloves garlic
1 C chicken broth
1 T tomato paste
1 16 oz. can diced tomatoes
2 whole tomatoes
2 tsp garlic powder
1 green pepper, diced
1 medium onion, diced
2 T olive oil
How to Make Instant Pot Chicken Cacciatore
Place 1 T oil in Instant Pot. Set timer to saute.
Salt and pepper the chicken thighs. Brown the chicken on both sides in the Instant Pot.
Place 3 cloves of garlic in the Instant Pot with the chicken thighs and add the chicken broth.
Add the rest of the ingredients. Set the timer for 15 minutes.
When the time is up, allow the Instant Pot to naturally depressurize.
Your Instant Pot Chicken Cacciatore is now ready to serve. I recommend plating with cauliflower rice and adding the veggies from the Instant Pot on top.
