Cut slits, 1/4" apart, in each potato, making sure you stop before cutting all the way through the potato. (Note: I like to use chopsticks on each side of the potato to help stop the knife from cutting the potato all the way through.)
Preheat air fryer to 350 for 5 minutes.
Use a brush to spread olive oil onto the potatoes and sprinkle with salt, pepper and garlic powder. Add to preheated air fryer basket.
Heat at 350 degrees for 30 minutes.
When cooking cycle is complete, mix together melted butter and Parmesan cheese and spread on top of potatoes. Return to air fryer for 5 minutes.
Sprinkle with chopped fresh parsley and serve immediately.
