Homemade Fried Rice
This simple and easy Homemade Fried Rice recipe is just as good as any Chinese restaurant fried rice. This classic rice dish with eggs and vegetables only takes minutes to make and is so yummy!

Ingredients

onion
diced

frozen mixed vegetables
or stir fry vegetables

garlic

fresh ginger

cooked long grain rice
cooled

low-sodium soy sauce

sesame oil

green onions

Instructions
Heat 1 tablespoon canola oil in a large pan over medium-high heat.
Add in eggs and scramble until cooked through. Place scrambled eggs on a plate and set aside.
In the same pan, heat an additional 1 tablespoon oil and cook diced onion until translucent.
Add mixed veggies, garlic, and ginger in with the onion and cook for 1-2 minutes.
Stir in cooked rice, scrambled eggs, soy sauce, and sesame oil and cook until heated through, about 3-5 minutes.
Garnish with green onions and a light drizzle of sesame oil, optional.
