These Easy Ricotta and Tomato Savory Hand Pies are so delicious. The heirloom tomato and rich ricotta cheese compliment the flaky puff pastry. Everyone will love this recipe!
Preheat the oven to 400 degrees (or recommended temperature on the package for the puff pastry) and line a baking sheet with parchment paper.
Chop the tomatoes and cut the pastry dough into four equal strips.
Evenly divide the ricotta and tomatoes and spoon them onto one half of each pastry dough piece.
Sprinkle with basil, salt and pepper.
Fold over the other half of the pastry dough and use a fork to press the edges closed.
Drizzle with olive oil and bake for about 30 minutes. You want to make sure that as many layers of the pastry dough as possible are able to puff up and cook.
The pastries should be done when they are golden brown and fully puffed up.
Allow a little time for them to cool before serving.
