Gnocchi with Tomato Sauce is one of the best pasta dishes. Soft and chewy pasta dumplings are served with a seasoned tomato sauce.

canned diced tomatoes

dried basil

garlic powder

potato gnocchi

fresh basil

Instructions
In a large saucepan, heat cooking oil.
Once oil is heated, add in onion and carrots and cook until carrots are fork tender, and the onions are translucent.
Add diced tomatoes to a blender along with the carrot mixture.
Puree sauce in a blender or by using an immersion blender. Make sure there are no large chunks of carrot in your sauce.
Return sauce to pan and stir in brown sugar, basil, oregano, and garlic powder.
Let simmer for 15 to 20 minutes.
While pasta sauce is simmering, prepare gnocchi by following package directions.
Once the gnocchi has been prepared, combine gnocchi with pasta sauce and top with fresh basil and Parmesan. Serve warm.
